Kiortosh?

Yesterday I was at a conference in Jerusalem.  The location of the conference had an interesting bakery with a very unusual cake and baking technique…  It’s a Kiortosh!  What’s a kiortosh?

Seems you take thin layers of dough with chocolate, maybe dough for what we call rugalach – a small twisted yeast and chocolate pastry, and wrap it around a baking pin?

Then you let them rise or set or something, and stick the rack in the oven…

I would guess separating the freshly baked ones from the pin without breaking them is the tricky part…

And then it’s ready to eat!

I mentioned it to my wife who said “oh yeah, it’s a Hungarian tube cake”. 

Israel has such an interesting mix of cultures and yummies.  My diet is not happy with this finding.
